Beans & Roasts
Coffee is an agricultural product before it is a drink. Altitude, soil and the way the cherry is dried decide most of what you taste — the roast only reveals it. These are the origins the specialty world keeps coming back to, and the ones we buy from when the harvest is right.
Ethiopia
YirgacheffeThe birthplace of coffee. Heirloom varieties grown in forest gardens give a tea-like cup that tastes closer to perfume than to coffee.
Kenya
Nyeri & Kirinyaga AAVolcanic soil and a rigorous double soak wash build the sharpest acidity in the coffee world. Bold enough to drink black all day.
Colombia
HuilaThe dependable classic. Two harvests a year and mountain shade produce a balanced, sweet cup that never fights the milk.
Panama
Boquete GeishaThe most celebrated lot at auction year after year. Delicate, floral and priced like wine — we pour it as a limited guest brew.
Guatemala
AntiguaGrown between three volcanoes, in soil that holds heat and moisture. Rich body that carries espresso beautifully.
Costa Rica
TarrazúHoney processing leaves fruit mucilage on the bean while it dries, adding syrupy sweetness without losing clarity.
Brazil
Cerrado MineiroThe backbone of our espresso blend. Sun dried in whole cherry for a low acid, nutty sweetness that stands up to milk.
Indonesia
Sumatra MandhelingWet hulling in a humid climate gives the heaviest body of any origin — syrupy, savoury and unmistakable.
Jamaica
Blue MountainGrown in cool mist above Kingston and famously scarce. Gentle rather than loud — the cup people call smooth.
Yemen
HaraazCoffee has been terraced on these mountains for five centuries. Wild, winey and the closest thing to drinking history.

Three chocolates. One statement.
We spent months on one question.
Each layer is a different chocolate.
Baked in small trays.
Best with filter coffee.
Tasting Nights
Right now we are drinking a lot of coffee.
We do the hard part.
Leave us your name.
Dates and price announced here first.
Our Story
Statue Coffee grew out of years spent behind counters and beside roasters — learning which details a guest can taste and which corners can never be cut. That experience is the whole recipe: good beans, clean water, steady hands and service that treats every cup as the only one.
The name comes from the Statue of Liberty. She stands for the freedom to arrive, to begin again, to stand tall wherever you are — and we raise a cup instead of a torch. That is what we mean by Brew Your Freedom.
We started in Istanbul, and we are not planning to stop there. Wherever the counter goes next, the standard travels with it: small batches, honest prices, the same welcome. Until then — see you across the world, one cup at a time.
